Three wines to honor Roey Weiser. A rosé, Red and White.
Rosé – A blend of 49% Morvadare, 30% Grenache, and 21% Syrah.
Before the skins are squeezed, the grapes are allowed to soak for a short period of time (about two hours). The fermentation is then carried out on a cold temperature. Following the fermentation of the residual sugars (dry rosé), each variety was fermented separately, and the blend was made after the fermentation was completed. A rosé with a light peachy color characteristic of southern French wines. This wine exhibits a pleasing fruitiness and a balanced acidity.
Red Wine – The blend consists of 75% Cabernet Sauvignon grapes, 20% Merlot, and 5% Cabernet Franc. All from the 2022 vintage (אוצר בית דין), which were selected from specially selected areas for the blend. Before bottling, the blend was aged in French and American oak barrels for about 16 months, first in separate barrels for eight months and then in the same barrels for another eight months.
These wines are in memory of Roy Weiser.
He served as a platoon sergeant in the 13th battalion in Golani, and was killed at the age of 21.
He sacrificed his life on October 7, 2023, while fighting terrorists who entered Israel at the Erez crossing to save his fellow soldiers.
