In Memory of Dan Wajdenbaum: Wine Duo, Red & White.

1. Red wine – Blend of five grape varieties from the 2022 vintage (היתר מכירה), including cabernet sauvignon, grenache, syrah, morvadera, and a touch of gewurztraminer.
   It was aged in French and American oak barrels for about 16 months, initially each grape variety for eight months separately, then the blended wine for another eight months before bottling. A medium-bodied blend with a marvelous finish, carrying aromas of ripe plum, cassis, green pepper, and apricot and lychee. An elegant and balanced wine that will be a great partner for cheeses and Asian food. In the right conditions, the blend will continue to improve over time. Alcohol: 13.5%.
2. White wine – a semi-dry white blend wine. Varieties include 33% Chardonnay, 25% Roussanne, 15% Viognier, 15% Gewurztraminer and 12% Sauvignon Blanc. The different grape varieties fermented separately. At the end of fermentation, the final blend was prepared and the fermentation was stopped before the wine was dry by lowering the temperature to zero degrees and separating the wine from the yeast. The wine still contains about 7 grams of sugar per liter, so even though it is semi-dry by definition, it is not heavy and can be paired with any meal. This wine has straw green color, powerful aromas of blossoms and tropical fruits, a rich and complex taste with pleasant sweetness and crisp and balanced acidity; it contains 13% alcohol.
